New juice bar opens early at Excelsior & Grand

Vibe Organic Juice Bar attracts younger generations

According to sophomore Kaia Myers, Vibe Organic Juice Bar is beneficial, unique and has already made a name for itself in the Park community.

“I was surprised because it’s a small place, but they have a good variety of options to choose from,” Myers said. “I had no idea that it was all going to be vegan, and I think it’s really cool that it’s all plant-based. There are not a lot of restaurants and eateries that have those options in St. Louis Park.”

Owner and founder of Vibe Organic Juice Bar Amber Thielen said the juice bar is not only meeting expectations but thriving.

“We are on our third week in business, and things are going really well so far. Our goal was just to get the doors open and see what kind of response we had from people, and it was the response we had hoped for,” Thielen said. “There have been a lot of girls coming in from the high school, so it has been great to see.”

Sophomore Maddie Lind said the plant-based options are helpful, especially when it comes to choosing what to eat.

“All the food was vegan, which was really great for me as a vegan,” Lind said. “I didn’t have to worry about looking through all the menu items and figuring out what I couldn’t eat which was great.”

According to Thielen, the juice bar’s wide variety of food items attract customers in the community.

“The community has been super welcoming, and they’re just so happy that we’re here to offer clean food that’s organic,” Thielen said. “They’re just loving all the different recipes and different offerings that we’re bringing to them.”

Myers said the juice bars originality and convenient location remain two of the biggest advantages.

“I think it’s a really great addition to St. Louis Park’s array of restaurants. It’s unique and not like anything else we have, and it’s near the high school,” Myers said.

Thielen said the restaurant has altered their menu based on what seems to be least popular.

“There have been a couple of changes to the menu already,” Thielen said. “Things that weren’t selling well, we quickly evaluated and (determined) if it made sense to keep that item on the menu.”

Myers said customers should be prepared for higher prices, knowing that all the food is of high quality.

“You are definitely paying for an all organic, plant-based, handmade and fresh product,” Myers said. “It’s a little bit more expensive than your average smoothie or juice that you would find in the grocery store or other restaurants.”

According to Lind, the inside of the restaurant is aesthetically pleasing and creates a fun environment.

“The interior was kind of minimalistic, but the menu was up on a chalkboard which was really trendy and kind of instagramy,” Lind said. “Nothing hurt your eyes.”

According to Thielen, the juice bar has recognized customers input and is dedicated to satisfying all customer needs.

“We’ve made little tweaks here and there but nothing large,” Thielen said. “Basically, listening to what the customers think and customizing it to what their needs are is something we try our very best to do.”

Lind said she was impressed with the juice bar and can’t wait to return.

“The food was really great and they have a good variety of menu options. I’d say it deserves much more than one star on Yelp,” Lind said. “I’d go back.”
